Kaanji – Kaale Gajar Ki Kaanji, a fermented drink from North India, marks the end of winter in the Northern States. A great digestive booster and ideal for sluggish gut, this pro-biotic drink has a salty tangy taste. The purple or black carrots have extraordinary nutritional benefits due to the presence of anthocyanins which give it an intense deep hue and have anti-inflammatory properties. This spiced brew is flavoured with rai(mustard),pink salt and a tinge of red chilli powder. Traditionally prepared in ceramic jars, the purple carrots mixed with water and spices, is kept in the sun for 4-5 days.
